I'm crock potting a pork roast w/ onions, garlic & apples, 1st time. What spices are best?

Plain old salt and pepper, yum! When I crock pot a pork roast, I put a thin layer of sesame oil on the bottom of the pan to add a little extra flavor to the meat. Both my kid and I love it. Juices from the meat combine with the sesame oil, I pour those off a little bit before the meal is done cooking to make a great tasting gravy.
